25. Spicy Beef with Eggplant

When I cooked this dish, I just wing it and go with what I have in the fridge and pantry. There was some eggplant that the husband would love, and the beef, he loves that one, too.
So combining them together would be interesting, I thought. And yes, it was. It was different from the usual daging masak sambal that I would sometimes make, and yet spicy enough for me.
I served this with plain white rice and some vegetables on the side.
SPICY BEEF WITH EGGPLANTIngredients
- 600g beef, sliced
- 1 large eggplant, sliced into 3″ long stick
- 2 large onion, sliced
- 4 garlic, sliced thin
- 2 inch ginger, crushed
- 1 lemongrass, whole
- 2 TB chilli flakes
- 2 TB chilli powder
- 2 TB nampla/fish sauce
- 2 TB oil
Method
- Heat oil, saute garlic and onion till fragrant, then add lemongrass and ginger. Continue to stir for a minute or so, then add beef, chili powder, and chili flakes. Continue stirring on medium. Cover the pan, let it simmer for another 15 minutes.
- Then add eggplant. Cover it back. Cook for further 10-15 more minutes, or till eggplant’s cooked. Then add nampla, stir to mix, take off heat immediately.
- Garnish with sprigs of coriander leaves.
