24. Coconut Spiced Fried Chicken

This was made to accompany the Nasi Lemak in previous entry. It is quite easy, and quite delicious, if I may say so myself.

This could also be marinated a day earlier in the fridge, then fried just before eating.

COCONUT SPICES COATED FRIED CHICKEN

Ingredients

  • I whole chicken, cut into 8
  • Enough oil to deep fry

Blitz roughly in the miller

  • 1 inch ginger
  • 1 inch tumeric
  • 4 garlic
  • 2 TB cumin seeds
  • 2 TB coriander seeds
  • 2 TB fennel seed
grounded ingredients
Spices

  • 3 TB chili powder
  • 1 TB coriander powder
  • 1 TB cumin powder
  • 1 TB salt
  • 1 TB sugar
  • 1 egg
  • 1/2 cup flour
  • 1/2 cup dried dessicated coconuts
  • 1 1/4 cup water

Method

  1. Mix the grounded and other ingredients to make a thick paste. For one chicken, I used 1 cup of the marinade, about half of the paste here.
  2. AND, double the amount of chilli powder used because this amount is too bland, even for my husband. (Adding about 2 TB chicken curry powder would helps, too).
  3. Marinade for about an hour, then deep fry in hot oil till cooked, about 20 minutes. Don’t crowd the pot while doing so.
  4. It would be easier if you have one of those electric deep fryer, where you could set the temperature at about 160 degree Celcius.
