12. Garlic Butter Chicken with Vegetables

A special day today. Our third anniversary, that is. And so I let the husband cooked dinner for us tonight :)
I don’t usually let him cook because he don’t seemed to think that there would be a kitchen fairy cleaning up after all the mess that would be definitely be making should he decided to cook.

Like I said, special day. So I let him cook.

And I was not disappointed because the dish came out great.

I remembered asking him how he made it, because it was delicious in simple kinda way. This is roughly what he told me..

Garlic Butter Chicken with Vegetables

GARLIC BUTTER CHICKEN WITH VEGETABLES

Ingredients

  • 2 chicken breast
  • 3 bok choi, roughly chopped
  • 10 whole baby corn
  • 1 onion, slice thick
  • 3 garlic, mashed
  • 4 TB butter
  • lots of ground mixed peppers (tonnes the way he described it)
  • Salt to taste

Method

  1. Saute garlic and onion, then add the chicken breasts. Cook on high to char the breasts, then turn. Again, make sure the heat is high so that the chicken breasts would char.
  2. Lower the heat, and cover the chicken for 10 minutes.
  3. Add salt and the vegetables. Cover for another few minutes, just to cook the chicken. Then take off heat and serve immediately.

Like I mentioned earlier, this is such a simple dish to make. And it was very good, indeed.
