The coding is driving me nuts. Though I could use the visual coding, since I am using this ol computer, I guess what more could I ask, eh?

But anyway, this would be a great accompaniment to previous dish.

Red Onion, Chilli and Gram Flour Bread

RED ONION, CHILLI AND GRAM FLOUR BREAD

Ingredients

  • 150g plain flour
  • 150g gram flour
  • 1 onion, finely diced
  • 1 chilli, finely diced (could be omitted)
  • 1 TB fresh coriander leaves
  • 1 TB cumin seed
  • 100-150 ml lukewarm water
  • salt
  • sunflower oil for light brushing

Method

  1. Sift the plain flour and gram flours into a large mixing bowl, then add the diced onion, chilli, chopped coriander, and cumin seeds. Add about 1 TB salt then mix it well together.
  2. Gradually pour in the measured water, and then knead for few minutes on a lightly floured surface to make a soft dough.
  3. Allow to rest for 15 minutes, then divide into 6 equal portions. Roll these portions into balls
  4. Roll the balls on a lightly floured surface to a 15 cm disc, or into an oblong shape.
  5. Then preheat a lightly oiled flat griddle pan or nonstick pan on medium high. Then cook the rolled out dough one at a time. Cook for about 30 seconds on one side, and brush with a little oil, then flip it over to cook for another minute or so.
  6. Then flip it back again on the other side to cook for another minute. The bread needs to be brown on both sides. Then take off heat and keep warm wrapped up in a foil. Repeat with the rest of the rolled dough.
