9. Potatoes and Carrots Frittatta

This I made with my little two-year old (then) in mind. She loves eating eggs in any forms. And she loves eating her rice just with fried eggs, too.

So I think thought of making a frittatta with some taters (that she also likes) and carrots (another winner). Decided to divvy up the concoction in two to add some sliced tomatoes on top.

This would be good on its own, and good as accompaniment to the plain white rice, as the pumpkin would attest !

POTATOES AND CARROTS FRITTATTA

Ingredients

  • 2 medium sized potatoes, boiled about 3/4 cooked. Cool it down, then grated.
  • 1 large carrot, blanch in hot water for about 10 minutes. Then grate.
  • 2 small tomatoes, sliced.
    About 1/3 cup grated cheese, any kind will do.

Beaten together

  • 7 small eggs
  • 1/2 cup plain milk
  • 1 TB salt
  • 1 tsp white pepper powder

Method

  1. Grease a tart pan. Then line the pan with grated potatoes, then the grated carrot.
  2. Pour the beaten eggs into the pan. On half of the frittata, put the sliced tomatoes on top. Then put it in a preheated 150 degree C oven for 20 minutes.
  3. Take it out after 20 mins to add the cheese. But remember : Oven temp differs from one to the other. If your oven burns faster, then lower the temperature to about 140 degrees C.
  4. Put the grated cheese on top of the half with tomatoes on top. Then slide it back into the oven for another 10 minutes, or till the cheeses melted.
  5. Take off heat, and serve warm.

Traditionally, grated cheese would be added to the beaten egg, not just on top of the frittata. But since I don’t really like it that way, I chose not to add the cheese that way. And this dish could easily be made for parents, and tiny people, too Smile

P/S I ate the ‘tata with added cheese on top with chili sauce maggi. NYUM I say! AND, next time around, I would probably use more eggs, and make this tata more substantial by ading more potatoes and carrots. Plus probably could be turned into a quiche by adding grated cheese to the eggs. How yummy is that!
