83. Prawn Fried Rice

This I made with the husband in mind. OK so he pestered me into cooking this, I admit heh. Why did he insisted on prawn fried rice?

Here’s the short version. I love eating mee udang, or literally translated as prawn noodles. My mom used to take me and the family to eat over at this famous mee udang restaurant over in Sg. Dua, Seberang Perai. And upon coming home for the second time in 2004, that was the first place and the first thing I ate after mom picked me up over at the airport *grins*.

To cut the story short, the husband don’t really fancy eating noodles. But when he got there, he ordered their prawn fried rice, instead. I had never eaten it over there, but I was not surprised that it would be delicious since the prawns were fresh.

Having said that, he asked me to cook this for him. Even going to the extra mile of getting these large, juicy prawns for me. So what a girl to do? A girl cook, that’s what.

PRAWN FRIED RICE

Ingredients

  • 4 cups cooked, cooled rice
  • 1/2 kg large prawns, cleaned, keep the skin on
  • One bunch spinach, cleaned
  • 3 shallots, sliced thin
  • 5 garlic cloves, crushed
  • 4 heaped TB chilli paste
  • 3 TB sweet soy sauce
  • 3 TB oyster sauce
  • Salt to taste
  • 4 TB oil

Method

  1. Heat the oil, then saute the sliced shallots and crushed garlic until fragrant, then add the chilli paste. Cook on low for about 10 minutes to cook the chillies.
  2. Then add the prawn, soy sauce, oyster sauce, and about 1 TB salt. Stir to mix, let it cook on medium for about five minutes.
  3. Then add the rice. Mix it well to coat the sauce over the rice. Having done that, add the spinach.
  4. Again, mix it well, then adjust seasoning.
  5. Take off heat, and ready to be served with sliced chillies.
