80. Telur Bungkus

Literally translated as wrapped(bungkus) eggs(telur). Well, not eggs wrapped in something, but rather something wrapped in eggs. In this instance, cooked ground beef/chicken wrapped in eggs.

This is something that me and my family would order whenever we go eat out. Usually, we would order tomyam chicken or seafood, some vegetable dish, and then this one.

I first tried cooking this (with an aide of a friend, who incidentally is a good cook) when I moved to the United States in 1996 to go to school. She taught me the hows, and so I now could do it, albeit not as good as she.

But anyway, here is the recipe.

TELUR BUNGKUS (Simplified Version)

Ingredients

  • 400g ground beef
  • 2 shallots, sliced thin
  • 2 garlic, sliced thin
  • a pinch chilli flakes
  • a pinch of salt
  • 4 eggs, beaten with a pinch of salt

Method

  1. Heat up a non stick pan, then add the beef. Stir on low, and when the beef is halfway cooked, add the shallots and garlic. Mix well. Then add the chilli flakes and salt.
  2. Keep on stirring. When it is cooked, drain away any excess fat from the ground beef. Set aside to cool slightly.

Prepare the eggs

  1. Heat a big nonstick pan (I use non stick for convenience sake because I could never make my eggs not stick to regular pan).
  2. If using nonstick, you could get away with not using any fats at all, though brushing the pan with some fat would not do any harm. When it is hot, add half of the beaten eggs. Swirl it around to coat the bottom of the pan, and towards the edges.
  3. Remember to use medium high heat, don’t use low heat while doing this. When the surface of the eggs dried up a tiny bit, put half of the ground beef in the middle of the pan.
  4. Carefully peeled away the eggs from the pan, and cover one side of the ground beef (we are trying to make a square parcel here), repeat on all sides. You don’t have to cover the whole portion on each side, just enough to make sure the ground beef wouldn’t scattered away.
  5. Then put a plate on top of the pan, over the beef/egg. Then flip over. You would (hopefully) get a square egg parcel, without it splitting open.

I am so bad giving out instructions. Should anyone encountered any problems, just leave me a shout out, and I would try to help out, yes?

Like I just mentioned above, this is an over simplified version of the said dish. Usually, sauces such as chili sauce, soy sauce and/or oyster sauce would be added to the dish. Then, while the ground beef is cooking, mix vegetables and sliced ginger are added, too.
