76. Coconut, Chocolate and Banana Mini Muffin

I don’t bake much, nor do I prepare anything for tea, not most of the times since we don’t really do tea, really.

But while I was browsing through a magazine, I believe it was Olive, I saw this really easy muffin recipe, mini muffin recipe that is.

It has all the ingredients that I like : coconut, chocolate and bananas. So OK, I don’t really dig banana, but I could trick my husband into eating this because I could say that it contained bananas (and not saying anything about coconut which he hated).

COCONUT, CHOCOLATE, AND BANANA MINI MUFFINS

Makes 36 mini muffins (I scaled down the recipe to make 12)

Ingredients

  • 125g butter, melted
  • 50g caster sugar
  • 3 ripe bananas, chopped roughly
  • 2 eggs
  • 1 tsb vanilla extract
  • 300g self rising flour, sifted
  • 50g dessicated coconuts
  • 100g milk chocolate chips
  • Icing sugar to dust

Method

  1. Preheat oven to 180C. Grease 3×12 holes mini muffin tins with a little butter (I omit this because mine is a heavy nonstick muffin tin).
  2. Whizz the butter, sugar, bananas, eggs and vanilla extract in a food processor until well combined. I just whizzed it in the blender.
  3. In another bowl, add chocolate, dessicated coconuts and flour. Fold in the bananas mixtures, enough to moisten the flour.
  4. Divide the mixture equally between the muffin holes. Bake for 15 minutes until it turned golden and had risen somewhat.
  5. Cool slightly in the muffin tin, then turn the muffin out onto a rack to cool completely. Serve plain or dusted with icing sugar.
