59. Stir Fry Snake Beans with Squid

I try to cook vegetable dish to go with any dishes that we had at home, not only because it is beneficial for your health, but it is (usually) tasty, too.

When I was in the US, there were like five oriental grocery stores within five to ten minutes driving from my home. But no such luck in the UK. I mean, it is not hard to find oriental stores, but usually it would be at least 25 minutes away, in Croydon, and I am talking about Wing Yip, not Oriental City heh…

So whenever we go grocery shopping over there, we would buy vegetables that we cooked at home. And this one would be one of them.

Snake beans could taste weird if one is not accustomed to it. Overcooking it would make it mushy and yucky, like most vegetables. The best way is to cook it just enough that it still retains it’s crunchiness…

STIR FRY SNAKE BEANS WITH SQUID

Ingredients

  • 300 g smallish squid, cleaned and keep whole
  • A bunch of snake beans, cut into 2 inch length
  • One onion, sliced thin
  • 4 garlic, crushed
  • 2 red chillies, sliced thin
  • 1/2 tbs tumeric powder
  • 1 tsp salt
  • 2 TB oil

Method

  1. Heat the oil, saute onion and garlic till fragrant. Then add squid, salt and tumeric powder to it. Not forgetting the sliced chillies.
  2. Immediately add snake beans into the pan, saute till the snake beans is cooked, about five minutes.
  3. Ready to serve.
