49. Eggplant in chilly bean paste and hoisin sauce

A vegetable side dish I prepared when eating with rice. Served this with plain fried salmon. The dish could be made as hot as you desired with the addition of some chilli paste or chilli powder.

EGGPLANT IN CHILLY BEANS AND HOISIN SAUCE

Ingredients

  • 1 medium sized eggplant, cut about 2 inch pieces
  • 1 onion, sliced thin
  • 3 garlic, crushed
  • 3 TB chilli bean paste
  • 2 TB hoisin sauce
    3 TB oil

Method

  1. Heat the oil and saute garlic and onion till translucent and fragrant.
  2. Then add the chilli bean paste and hoisin sauce. Saute on medium for about a minute, then add the eggplant.
  3. Continue to saute for few more minutes until the eggplant is cooked. Adjust seasoning, and add a pinch of sugar if the dish turned out too hot.
