67. Baked Kuih Cara Berlauk

I had never had this dish before, not once in my life, and yet I craved for it! Though I had eaten kuih cara manis, I never had made it myself, so I searched for some recipes to compare.

Upon comparing, I noticed that it is not hard to make, though I was thinking that I need to modify some things because I don’t have the kuih cara pan to cook it on the stovetop.

So I decided to use the mini sized muffin pan, and bake it in the oven.

I was pleased that the cara turned out creamy and yummy!

BAKED KUIH CARA BERLAUK
Ingredients

For fillings:

  • 500g ground beef/chicken
  • 1 onion, diced
  • 2 medium sized carrot, diced
  • 3 celery, diced
  • 2 garlic, sliced thin
  • 1 TB garam masala
  • 2 TB chilli powder
  • 2 TB tomato puree
  • 1 TB oil
  • Salt and sugar to taste
Method

  1. Saute onion, 2/3 of celery and carrot, and garlic till opaque. Then add ground beef and garam masala, some salt to taste. Stir to mix.
  2. Cook down, adjust seasoning. At this point, I took out about 1/2 cup of the mixture for Pumpkin.
  3. Add chilli powder and tomato puree at this point. Cook for a moment to cook down the chilli, then adjust seasoning. Add the rest of diced celery and carrot, mix well.
  4. Then set aside to cool. And the cooked mixture should be quite dry.

For batter

  • 2 cups plain flour
  • 1 1/2 cup coconut milk
  • 1 to 1 1/2 cup water
  • 2 eggs
  • Salt and enough tumeric powder
To make the batter

  1. Mix all the ingredients well. It could be beaten up with a whisk, or just blitz in the blender. Then run it through a sieve to make sure the flour is mixed well.
  2. I pour the batter into a measuring cup to make it easier to pour into the muffin pan. This mixture is enough to fill two mini muffin pans (each containing 24 mold).

To assemble

  1. Easy. I used mini muffin pan (yielding 24 mini muffin per pan). Fill about 2/3 of each mold, then top it with the cooked ground beef and sliced spring onion.
  2. You could stop at this point, but I made an experiment. One pan I made this way, the other pan I pour more batter to partially cover the ground beef. Then I top it off with spring onion.
  3. Preheat the oven around 160ºC-170ºC.
  4. Bake in the oven for about 10 to 15 minutes only, no more. Take out of the oven, let if cool down a little bit before taking it out of the muffin pan.

Pour some batter inside the mould, top off with the filling, then sliced scallions.

Kita nak cuba yr baked kuih cara berlauk, teringin sangat…lagi2 suka sbb using e mini muffin tu.. Tapi, u tak stated how high is e oven temperature? Pls advise..tak tahan tekak ni..

Nasib baik you mentioned it! I honestly did not realize that I did not put up the temperature!
Dah tinggal lama the oven kat UK tuh, sungguh tak ingat.
But it was moderately heated oven, around 170 C if I am not mistaken.
Kejap I make the modification ya.
