MASAK LEMAK MEATBALLS WITH BUTTERNUT SQUASH

Ingredients

  • 500g extra lean ground beef, make into small meatballs
  • 2 potatoes, quartered
  • 1/2 squash, cleaned, skinned, and cubed

Prepare the squash

  1. Cut the butternut squash in half, then cleaned out the seeds.
  2. Cut it into small pieces to cook.

  • 1/2 cup cili padi
  • 2 inch tumeric
  • 1 lemongrass, bruised
  • 3 asam keping, cleaned
  • 1 green *whichever color u like* bellpepper, cubed
  • 200ml thick coconut milk
  • 200ml hot water
  • Salt to taste

Method

  1. Put the grounded paste, coconut milk, water, lemongrass and asam keping in a pot. Turn the heat on medium, stir to mix well, and let it come to a slow simmer.
  2. Then add some salt, and potatoes. Boil for 10 minutes, then add butternut squash. Let it come to another slow simmer.
  3. You can either add the meatballs directly in the broth, or you could half steam them (I experimented with this method this time around. I just usually add them in to the broth), sprinkle some salt on top.
  4. Take it out after 10 minutes, then add the cubed bellpeppers. Let it boil once, adjust seasoning, then take off heat.
  5. To serve, just ladle the broth and root vegetables on top of the meatballs.
