SPICY OVEN BAKED SALMON

Ingredients

  • 1 whole salmon fillet
  • 1″ ginger, julienned
  • Lemon rind from 1 unwaxed lemon
  • 5 garlic, sliced
  • 1/2 cup of sliced spring onion

Mix together

  • 3 TB sesame oil
  • 2 TB oil
  • 1 ts salt
  • 1 TB chilli flakes (use less to reduce heat. It was so hot using this much)
  • Salt and sugar as needed
  • Foil as needed
Method

  1. Preheat the oven at 170 degree celcius.
  2. Cut enough foil to make a parcel of the salmon, basically twice the length of salmon. Line baking sheet with the foil, then drizzle some oil on it.
  3. Gently place the salmon, skin side down on the foil. Then sprinkle the sliced garlic, julienned ginger, and lemon rind (sliced thin/julienned), then pour the chilli oil on top. Top it off with sliced spring onion.
  4. Sprinkle some salt, then about 1 tsp of sugar. Why? Because it is hot.
    Then make a parcel by folding over the other half of the foil, and sealing in the three ends.
  5. Bake in the oven for 30 minutes.
    Be very careful when opening the foil later on because there would be lots of hot steam inside.
