My husband likes pedal, while I don’t care much for them. This is just something that I made up while trying to figure out what to do with the leftover pedal’s (my husband had fried some earlier on)…So this is what it became…

PEDAL GORENG BEREMPAH

Ingredients

  • 200g pedal
  • 1 spanish onion — sliced
  • 4 garlic — crushed
  • 1/2 cup sliced red bell peppers
  • 1/2 cup sliced yellow bell peppes
  • 1 lemon grass — bruised
  • 3 asam keping

Mix:

  • 3 TB cumin powder
  • 3 TB coriander powder
  • 1/2 tsp ginger powder
  • 1/2 tsp garlic powder
  • 1/2 tsp tumeric powder
  • Salt to taste
  • Oil

Method

  1. Mix the pedal with salt and tumeric powder. Fry till half cooked. Set aside.
  2. Meanwhile, saute the onion, garlic, and lemongrass. Then add the mixed rempah and asam keping. Mix well till pecah minyak.
  3. Then add the pedal. At this point, you could either make it a wet or dry dish. If so, add like 1/2 cup of water, and let it simmer. Add the peppers just before taking off heat.
  4. Adjust seasoning, then take off heat.

*To give some crunch to this dish, I added sliced celery when I add the peppers.
